1 cup plain flour
1 cup rolled oats
1 cup desiccated coconut
2/3 cup raw sugar
125g dairy-free spread, such as Nuttelex
1/4 cup golden syrup
½ tsp bicarbonate of soda
1. Preheat oven to 180°c. Line two baking trays with baking paper.
2. Combine flour, oats, coconut and sugar in a large bowl. Heat spread and syrup together in a small pan over low heat until melted. Remove from heat. Dissolve bicarb of soda in 1 tbs boiling water and quickly stir into syrup mixture. Add to the dry ingredients and stir well to combine.
3. Drop tablespoons of mixture onto the trays, leaving room for the biscuits to spread. Flatten slightly with your fingers. Bake for 20 minutes until golden. Cool on tray for 5 minutes, then transfer to a wire rack. Store in an airtight container once cool.
